All About Happily Ever Delicious

Like most of us, COVID has really made a dent in my life. My profession is event management, so you can guess that I have a lot of time on my hands. Not too long ago, after watching all of Netflix, (including Tiger King!), I decided that I had to do something productive. Though not a trained baker, I can read a recipe with the best of them! There's nothing like creating something so delicious, it feels like a warm hug from Olaf. Oh yes, there are going to be plenty of Disney references! 
I've drawn inspiration from one of my favorite shows, The Great British Baking Show (or The Great British Bake Off for any UK followers). Each week I will tackle an episode of the show: three bakes done under all but the time guidelines of the show. I  want to perfect my technique, not be rushed. Judges (guinea pigs?) will be my family, friends, and mother's co-workers, all of whom I hope will give me their honest opinions. After each bake, I will post the original recipe, the set-up and steps, and the finished product. Once a month, I will be diving into a Disney-based dessert. I LOVE Disney- the movies, the music, the kingdom! I want to incorporate that happiness into my baking as well. One Disney philosophy is; spread happiness! So, from a socially acceptable distance, I will be delivering some baked goods to family and friends. These are scary, uncertain times and I want to spread happiness not viruses.
Being from Charleston, SC, I'm surrounded by delicious food and wonderful chefs, I hope through Happily Ever Delicious, I can also have the opportunity to show them off!

Rye Rolls

Well y’all… I apologize greatly for being MIA for a while. Between a small COVID friendly vacation and getting back to work, my baking has taken a backseat.
I did Bread Week over the course of a few weeks just to space out the amount of bread I was pushing on my family and friends.
For my Signature Bake, I made Cider Rye Rolls. They were YUMMY!! So Fall-friendly! I used a spiced cider that made them taste like hot apple cider. This was my first-time using rye flour and it made a very solid dough. It was very easy to work with and I followed my usual procedure: water and yeast first, then the flour and salt, and then the “extras” - cider, honey, and oil. Once proofed, I shaped them into rolls, and proofed them again before baking. They were so good I’m considering making them for Thanksgiving this year. I love making bread, so this “week” was a lot of fun for me! 

Ingredients

Added to the basics of flour, water, yeast, and salt we have rye flour, honey, oil, and cider.

Water and Yeast

I decided to make these rolls in the same way I usually make bread. The water and yeast first, followed by the flour and salt. After that I added all of the other ingredients mixing them in one by one.

I did add both flours; all purpose and rye to the water and yeast mixture before the salt.

Before the proof, we fold and shape the dough to activate the gluten.

Here is the dough after its' first proof. After this it was divided into small rolls and shaped for a second proof.
